Inside Scoop on Planning a Wedding at The Breakers, Palm Beach, FL

Wednesday, November 2nd, 2011

The Breakers, one of America’s legendary oceanfront resorts, is located on the island of Palm Beach, Florida. It was founded by Henry Flagler in 1896 and has been under the same family ownership (his descendants) for 115 years. Today, this completely renewed, Italian Renaissance-style resort offers an alluring array of modern amenities and services all on site – fabulous dining, incredible beachfront, golf, spa, tennis, recreation and shopping. I meet with Joan Bever who is the Director of Food and Beverage for Catering and Banquet Operations at The Breakers Palm Beach. She was gracious enough to answer a few questions about The Breakers.

The Breakers

GO: What is your unique role when it comes to a couple’s wedding day and how does your property distinguish a couple’s experience as opposed to getting married somewhere else?
JB: I oversee a highly tenured team of catering sales managers, who guide the bride and groom throughout the entire wedding planning process, and seamlessly execute from conception to the fulfillment of the event. They are well versed in every facet… wedding ceremony, receptions, music, décor and design, photography and video, amenities, gifts, and clergy.

Supporting the catering staff is a talented team of on-site specialists who perform their craft right at the hotel: the Design Studio for décor and floral, as well as award-winning chefs who produce delectable weddings menus. Master Sommeliers are also on-site to help guests select from an expansive collection of wines and champagne.

GO: From start to finish, what can a couple expect if they choose to get married at your property?
JB: When choosing The Breakers for a destination wedding, couples can expect a spectacular venue, extraordinary cuisine and above all, very personalized service. From the first meeting with one of our catering managers, to the menu tasting and through every aspect of the planning process and the wedding weekend, our staff combines experience with sensitivity to ensure that the bride and groom’s dreams become a reality.

Most importantly, our team forms relationships with our brides, grooms and their families that begin the moment they meet and continue long after the vows are read and the cake is cut.

GO: If you had to describe your property in three words, what would they be?
JB: Timeless, American and Glamorous!

GO: What are the unique locations that a couple can host their ceremony and reception at in your venue?
JB: The Breakers has many amazing locations for oceanfront and garden ceremonies; indoor ceremonies and incredible receptions, and can accommodate 25 to 800 guests. A few of my favorites include . . .

The Ocean Lawn: The Ocean Lawn has a breathtaking direct view of the Atlantic Ocean and provides the relaxed feel of a beachside wedding. Framed by palm trees, the Lawn is a favorite locale for stunning ceremonies. This outdoor paradise can be used for ceremonies, welcome and rehearsal dinners, and brunch. The Lawn accommodates 100 to 500 guests.

Venetian Ballroom: With floor to ceiling windows overlooking the stunning Atlantic Ocean, the Venetian Ballroom is one of The Breakers’ largest ballrooms. This majestic room accommodates up to 550 guests.

The Circle Ballroom: Ideal for an unforgettable ceremony or a gorgeous reception, The Circle boasts spectacular ocean views and a soaring fresco-painted ceiling. The Circle accommodates up to 200 guests.

The Ocean Terrace: Perched above The Beach Club, the Terrace is a secluded, romantic spot that offers panoramic views of the ocean, The Breakers and the surrounding beauty of Palm Beach. The Terrace is ideal for ceremonies, welcome parties, rehearsal dinners, and brunch. The Ocean Terrace can accommodate 150 guests.

Mediterranean Ballroom: The Romanesque Mediterranean Ballroom features views of the Mediterranean Courtyard and fresco-painted renaissance ceilings. The Mediterranean Ballroom accommodates up to 250 guests.

Mediterranean Courtyard: The Renaissance-inspired courtyard is an ideal spot for a romantic ceremony or it can be transformed for a dazzling cocktail hour. The Courtyard accommodates 75 to 500 guests.

GO: Do you have areas where a couple can elect to take their wedding pictures at your property?
JB: Couples getting married at The Breakers can take their wedding photos – and engagement photos – anywhere on the property. With our Renaissance-inspired architecture, fresco-painted ceilings, elegant main drive and breathtaking oceanfront and garden settings, The Breakers is a photographer’s dream for wedding photography.

GO: Food is such an important element at a wedding; tell me about your menus/culinary team?
JB: The Breakers stands alone with unmatched quality and versatility in cuisine, presentation and service. The wedding dinner for 50 or 500 is as elegant and delectable as a gourmet dinner for two. Executive Chef of Banquets Jeff Simms is the culinary mastermind behind the most savory and beautifully presented wedding menus, and his outstanding banquet fare rivals that served in the finest restaurants in the country.

GO: What is the first thing a couple should do if they are interested in getting married at your property?
JB: Contact us! Brides and grooms can reach our office directly at (561) 659-8415 or via email at weddings@thebreakers.com. Couples can also contact us through our blog’s contact page. Wednesday, October 12th, 2011

Central Park, Fifth Avenue, spectacular art, thriving culture, endless shopping, unbelievable dining and lively nightlife – this is New York City. Amid the whirl of excitement you will find The Plaza, a Fairmont Managed Hotel, a timeless landmarked New York hotel capturing memories since 1907. Last October the Plaza Hotel hosted our last stop to our book tour and I had the absolute pleasure to speak with the Director of Catering Michael Warren. In 2007 after a 400 million dollar restoration, Michael was named Director of Catering at CPS Events at the legendary Plaza Hotel. Micheal answered a few questions below on the legendary experience of having your wedding at The Plaza Hotel.
Plaza Hotel
GO: What is your unique role when it comes to a couple’s wedding day and how does your property distinguish a couple’s experience as opposed to getting married somewhere else?
MW: The couple has a dedicated person right from the first phone call through the end of the wedding.  What distinguishes us from other properties is that our wedding sales associate develops a close relationship with the families and gets involved with aspects of the wedding beyond the hotel.  Even attending the Henna party at the client’s home and wearing a traditional Indian Sari at the wedding.

GO: From start to finish, what can a couple expect if they choose to get married at your property?
MW: Aside from extraordinary food and service and a gorgeous ballroom they can expect very personalized service. Our wedding sales associate who manages every detail is with them the entire day of the wedding.

GO: If you had to describe your property in three words, what would they be?
MW: Timeless, Luxury and Luminous!

GO: What are the unique locations that a couple can host their ceremony and reception at in your venue?
MW: Exchange vows under the opulent canopy of The Plaza’s Grand Ballroom or in the timeless magnificence of The Terrace Room. This exceptional New York wedding venue will transform your special day into a one-of-a-kind wedding celebration that is both modern and timeless.

GO: Do you have areas where a couple can elect to take their wedding pictures at your property?
MW: Yes.  Terrace Foyer, front of hotel, and beautiful grand stair case.

GO: Food is such an important element at a wedding; tell me about your menus/culinary team?
MW: The love of food at CPS Events at The Plaza is rooted in seasonal, local and artisanal ingredients and infused with global flavors and classic principles. In season, much of our produce comes from our own organic farm in the Hudson Valley, Katchkie Farm. We have close relationships with our neighboring farms that make cheese, raise livestock, and produce specialty items. Each menu is tailored to match the taste and requirements of the individual event. Our presentation is designed to enhance the dining experience while introducing an element of food art and drama.

GO: What is the first thing a couple should do if they are interested in getting married at your property?

Oheka Castle allows its couples to be transported back to the era of elegance and sophistication once they enter through the doors of this French chateau. Any couple planning their wedding here feels like royalty with their impeccable service, ambiance and the award winning estate and cuisine. Standing in the enchanted gardens you would never believe that the busy lifestyle of Manhattan was less than an hour away.
I was able to chat with the Director of Sales, Kelly Melius, who has had the opportunity to see Oheka transform over the past 25 years into the elegant and enchanted castle that it is today. Over the years, owner Gary Melius, has over saw the thirty million dollar renovation that restored this property back to its grandeur and making the Oheka one of the most celebrated wedding venues in the world. The Inside Scoop on Planning a Wedding at The Four Seasons Hotel, Washington DC

Tuesday, August 2nd, 2011

Located in the heart of Washington DC, the Four Seasons Hotel is a superb location for your wedding day. This particular location is rated with highest honors, a 5 star & 5 Diamond. I was able to chat with Joseph Ritcher, the Director of Catering at the Four Seasons Hotel, who gave us a detailed look into the special services that couples receive when planning their wedding at the Four Seasons Hotel, Washington DC.

Four Seasons Washington DC

GO: What is your unique role when it comes to a couple’s wedding day and how does your property distinguish a couple’s experience as opposed to getting married somewhere else? Will the couple have a dedicated person, from your staff on location throughout the day?
JR
: The way we operate all of our weddings is a bit unique in DC. First, we are the only 5 – Star & 5- Diamond hotel in Washington DC. We make it know to potential couples that this distinction does not mean we are going to be more expensive, but it does mean the staff ratio will be higher than anywhere else and the level of service cannot be rivaled. As many know, the Four Seasons Hotels train all staff to go above and beyond every time, and to take ownership of any/all issues until resolved.

We have 2 full-time social wedding planners at the hotel that are side by side with the couple from the first tour of the property to the time the entree is served at their reception. Although we encourage many couples to either hire a full-time or day-of-planner for their wedding, out long time staff is fully equipped and knowledgeable about all areas of weddings.

During the wedding stay at the hotel each department plays a roll in doing something special for the couple. I cannot disclose these details because they are very unique to the Four Seasons – DC. Like our special menus, if we find out another property is doing something similar, we change the program. We always want to be at least one step ahead of the competition by doing cutting edge things for couples.

The hotel also has a dedicated reservationist to handle only wedding room blocks.

GO: From start to finish, what can a couple expect if they choose to get married at your property?
JR
: Non-stop contact from several staff members within the catering department custom menus (nothing from print) The ability to plan all aspects of your wedding using hotel staff – concierges for transportation and guests activities, Room service for personalized amenities for their guest rooms and our in-house A/V & Lighting Company – swank for lighting decor for their big day. Again, there are a lot of personal details we offer to the wedding couple and their families that we never even disclose to the couple until they notice themselves. We feel by doing these “things” and not sharing them in advance, the bride, groom and families remain on a constant high over their stay.

GO: If you had to describe your property in three words, what would they be?
JR
: Service, Service and Service!

GO: What are the unique locations that a couple can host their ceremony and reception at in your venue?
JR
: The Corcoran Ballroom – up to 320 – 5000 sq. ft.
The Conservatory – up to 125 – glass ceilings, marble floors and silk wall fabric
Douglass Patio – up to 50 – outdoors, patio, fountain, on the
Georgetown cobblestone toe-path and C & O Canal Seasons – up to 125 – floor to ceiling windows over looking private terrace.

GO: Do you have customizable packages?
JR
: All packages are listed on our website,
http://www.fourseasons.com/washington/weddings/wedding_packages.html

GO: Food is such an important element at a wedding; tell me about your menus/culinary team?
JR
: Executive Chef Douglas Anderson – 21 years with Four Seasons, 9 of which are at the DC property. He has a keen knowledge of our repeat clientele and the entire city’s event planners. Cooks & chefs representing 39 countries and cuisines, so all foods are authentic and made in house.

GO: What is the first thing a couple should do if they are interested in getting married at your property?
JR
: Don’t assume that because the Four Seasons is one of the leading hotel brands in the world you cannot afford the experience. My team is highly creative and flexible with pricing and menu selection, yet we do have our starting prices.

All of our banquet food would come from Charlie Palmer, our in house restaurant with all menus and flavors customized to the couple. Our Executive Chef, Scott Romano has worked for Charlie for years and has the ability to cater multi-cultural cuisine. Each couple would have a tasting with our Chef; he is incredible with his tastings and really reads the reactions to each dish. One thing I admire about Chef is that the integrity of our food is never compromised!

GO: What is the first thing a couple should do if they are interested in getting married at your property?
MH
: Call, email or just pop in to see me!

GO: Does your property have any unique features that you would like us to share with our readers?
MH
: The Joule offers a customized website for each couple hosting a wedding and courtesy block of rooms with the hotel. This site provides info on the couple pictures and allows for guests to book their rooms with. Another unique feature would be our standards; I have 8 standard linens, a standard centerpiece of a glass vase with a single orchid and to-die-for chandeliers that once dimmed down set the perfect wedding ambiance. Honestly, if you host your wedding at The Joule, a Luxury Collection Hotel you can just walk in and everything is ready for you!

Thank you Meredith for giving us a look into your remarkable Hotel!

The Inside Scoop on Planning a Wedding at The Four Seasons Hotel Las Vegas, NV

Tuesday, June 21st, 2011

The Four Seasons Hotel Las Vegas is located right on the Vegas strip, at the south end just steps away from world-class gaming, entertainment and nightlife. The Four Seasons Hotel Las Vegas is an impeccable, five-diamond  hotel that caters to every taste and style. Dennis Silknitter, the Assistant Catering Director has worked in the hotel industry for over 15 years and we were honored to chat with Silknitter who gave us a sneak peak on what it is like planning a wedding at the Four Seasons Hotel Las Vegas.

GO: What is your unique role when it comes to a couple’s wedding day and how does your property distinguish a couple’s experience as opposed to getting married somewhere else? Will the couple have a dedicated person from your staff on location throughout the day?
DS
: The first impression is our response time at the initial inquiry, then spending quality time over the phone to listen to their key needs and painting the picture of how their special day will unfold. We start our tour in our ‘Wedding & Event Planning Salon’, a private venue where we meet with couples and plan their event from start to finish. A welcome sign with both their names greets the guests of honor as they enter. The Wedding and Event Planning Salon has many pictures of past events, wedding cake displays, a themed guest table, pictures of our food and beverage presentations. We then sit down and show an introduction video of our hotel that allows them to see previous indoor/outdoor events, the spa, Verandah restaurant, and most importantly how photography is taken throughout our property. Either myself or a member of our team is dedicated to the couple from the initial meeting through their special day.

GO: From start to finish, what can a couple expect if they choose to get married at your property?
DS
: We understand the importance of being responsive, and we treat each bride and groom as if they are the only event we are planning all year. We do not offer inclusive packages. Instead every aspect is truly customized based on their individual ambiance and budget preferences. We like to say we partner with them, holding their hands throughout the planning process.

GO: If you had to describe your property in three words, what would they be?
DS:
Intimate, Exclusive and World Class

GO: What are the unique locations that a couple can host their ceremony and reception at in your venue?
DS:
We recently enhanced our preferred outdoor venue called the Fountain Terrace, which is a private lush oasis, with a cascading waterfall as a backdrop. The space starts with a winding pathway, which is perfect to butler pass a specialty drink on the arrival of your guests. Then guests can enjoy a fine dining experience poolside, complete with a waterfall and the evening lights of the Mandalay Bay Resort tower.

GO:Do you have areas where a couple can elect to take their wedding pictures at your property?
DS:
We have a stunning Grand Staircase, which may be blocked for private photo sessions, and has natural sunlight on both levels, that maximizes the lighting. Other options include a fountain at the front drive and sitting area with a fireplace in the main lobby that creates a residential feeling.

GO: Do you have customizable packages? Tell me a little bit about them?
DS:
We take pride in customizing each couples experience. We offer a broad, award-winning menu that can easily incorporate family tradition, culture or other preferences. We custom-tailor packages based on the couples ambiance and budget preferences.

GO: Food is such an important element at a wedding; tell me about your menus/culinary team?
DS:
When is comes to food, if you can imagine it, we can create it. Our talented culinary team partners with the bride and groom to create a menu based on their vision. A cocktail reception featuring comfort food with a modern twist, a plated affair with fine dining quality, the possibilities are endless. Our in house pastry chef works with the bride to create a customized cake of her dreams.

GO: What is the first thing a couple should do if they are interested in getting married at your property?
DS:
Call 702.632.5000. Most of our clients do not live in Las Vegas, so we suggest scheduling a personalized site tour with a member of our catering team.

GO: Does your property have any unique features (i.e. wedding website) that you would like us to share with our readers?
DS:
Visit www.fourseasons.com/lasvegas, which features a video that highlights our wedding offerings.

Thank you, Dennis for giving us a look into your remarkable hotel and services.

The Inside Scoop on Planning a Wedding at The St. Regis Bahia Beach, Puerto Rico

Tuesday, May 17th, 2011

Opening this past November, the St. Regis Bahia Beach is a luxury, brand new hotel offering only the best services to brides and their parties. Located in Rio Grande, Puerto Rico, the hotel provides the best venue for your destination wedding. With amazing bridal and catering services, the St. Regis Hotel at Bahia Beach is the perfect place to hold your beautiful wedding. We had the fine privilege of speaking to the Director of Catering and Conference Services, Geraldine Farulla who gave us a little background on the wonderful services this hotel has to offer.
St. Regis Bahia Beach
GO: How long have you worked in this industry and tell me a little bit about your experience?
GF
: I have been in the hotel industry, for approximately 26 years always in Catering and Conference Services as it allows for you to work directly with your customer from beginning to end, allows for a lot of creativity, is always changing and entails working with many different markets.

GO: What is your unique role when it comes to a couple’s wedding day?
GF
: I firmly believe that with weddings, it is our job to make this the greatest day for the bride, groom and immediate family.  I will guide them, advise them and build an experience based on their tastes, preferences and those of their guests.  With a wedding, there is a lot of emotional and first time experiences involved, as majority of couples are planning a wedding for the first time. Thus you have to educate them, while at the same time having a great deal of understanding.

At the St. Regis Bahia Beach, we take pride in providing a hand-crafted and customized experience that touches every part of their celebration; from the transportation from the airport to their experience upon arrival, to our Executive Chef who actively participates in menu design for our brides and our Personal Brides’ lady in waiting, who will be there to assist with anything the bride may need as she gets ready for that big day. Alejandra Soto and I personally take care of all brides from beginning to end so that they have one primary contact.

GO: From start to finish, what can a couple expect if they choose to get married at your property?
GF
: They can expect to feel special, understood, and well taken care of.  They can expect for us to meet and go beyond their expectations.

GO: If you had to describe your property in three words, what would they be?
GF
: Extraordinary, Captivating, Paradise!

GO: What are the unique locations that a couple can host their ceremony and reception at in your venue?
GF
: Located along almost two miles of pristine beach and on a Nature Reserve, the St. Regis Bahia Beach has two manicured ocean front lawns for private events, an intimate tree covered terrace outside the main Ballroom with thoughtful lighting, and built in event pavilion.  In addition, we have beautiful indoor banquet spaces to accommodate anywhere from 10 to 190 for a seated formal dinner or 250 for a reception style setting, as well as our ocean front clubhouse, Molasses, which has indoor and outdoor seating and can accommodate up to 150 guests. Our boat house is the ideal venue for a private engagement dinner or cocktail reception for out of town guests and overlooks the 63 acres of lakes and waterways which make up part of Bahia Beach.

GO: Do you have areas where a couple can elect to take their wedding pictures at your property?
GF
: I can only say that the entire property looks like a postcard and the opportunities for photographs are limitless.

GO: Do you have customizable packages? Tell me a little bit about them?
GF
: We have created wedding packages which are updated twice a year and allow the bride/planner to create her own package.  More importantly, we place a great deal of emphasis on customizing the entire experience, and with the active participation of the Executive Chef, we create a fully customized package.

GO: Food is such an important element at a wedding, tell me about your menus and culinary team?
GF
: Our culinary team is young, creative, and all native Puerto Ricans who carved out their professions in renowned hotels and restaurants in the mainland US and have come back to the St. Regis to be a part of this incredible resort. The menus reflect what our property is; a former Sugarcane and Coconut Plantation, dating back over 100 years, full of local flavor and flair, while maintaining the elegance and tradition of the St. Regis.

GO: What is the first thing a couple should do if they are interested in getting married at your property?
GF
: It is important to have an idea of the dates, number of guests that they will have in order that we may confirm availability.  It is very helpful to have an idea of what they are looking for so that we can customize the experience.

GO: Does your property have any unique features that you would like us to share with our readers?
GF
: We are in the process of further developing our website to reflect current photographs post opening, but can already offer brides the option to set up a website where guests can make their reservations, and brides can provide information regarding their events, agenda, and are likewise able to review their guest lists, etc.

Thank you Geraldine for giving us a peak into your BEAUTIFUL new hotel!
